Cooking Food
The processes used to improve digestibility of food and add flavour to it is know as cooking. The term cooking encloses wide range of methods and tools. Cooking food requires the proper selection combination and measurement of ingredients so to get the desired result and taste. A perfect out come of result depends on variability of ingredients, different tools, surrounding conditions and the skill of each and every individual. In this process the food is supplied heat which usually deforms it chemically, as the flavour, texture, apperance and nutitional properties are changed.
What are the effects of cooking? All the vegetables materials include protein. also all the Edible animal materials like offal, milk, meat, muscle ect consist of a good amount of protein in it, this may also consist of essential amino accids. when this food stuffs are heated there nature changes completely with a change in there texture as well thus in many cases it becomes softer or more fryable and thus it is called to be cooked. In some cases cooking can form more rigid structure like coagulation of albumen which is present in egg whites which are in the manufacture of other components such as cakes. In most cases the cooking involves addition of liquids that are added to immerse the cooking food in water, stock or wine.
One of the most important part of cooking is the addition cooking it so important that some processes in cooking are based on how the liqiud is combined with the food. Some processes related to liquid components are steaming, simmering, blanching, braisind and also boiling. The flavours and ingredients added in the cooking process get concentrated when liquids are heated in open. In cooking process the fats provide tastes and texture to the food. Both fat and oil come from the animal and plants. This fats allow us to cook the food at wide temperature range. The oil cooking techniques consists of sautering, stir-frying and deep frying. the fats which are commonly used are butter, lard, sunflower oil, peanut oil, olive oil, rapeseed oil, etc. Though the taste of the fats and oils used is quite unpleasant but they add an excellent taste to the food. This is why fats are consumed in more quantity and the food stuffs cooked with more amount of fats involved are termed as junk food.
What are the benefits of cooking food? When heat is supplied to the food while cooking it kills a number of harmfull bacteria and viruses. Thus cooking also protects from bacterias when cooked with proper technique under a specific temperature for a specific time period. Refregeration only slowers down the rate of growing bacteria but cooking kills all of them and thus stops the futher growth of it.
Thus cooking of food is very essential and must process in todays life. Though it has some adverse effect as well like loss of nutitions and proteins but this may not hide the large numbers of benefits of cooking food.
